I was hunting up in Saskatchewan several years ago when a local fellow asked if I would like to go see one of the top whitetail racks in the history of hunting. “Hell yeah!” I hollered and off we went to the small town of Debden. Personally I don’t do organs, neither lungs or heart, or liver for that matter. But if you want to try deer heart, collect it clean from a deer you gut and carry it home in a plastic bag. Then try this recipe courtesy of Trey over at Made To Hunt. Simple and easy way to cook up the deer heart: Cut off the ventricles and remove the fatty areas. Slice the heart into 1/4” steaks or however you prefer. Clean out the inside thoroughly and remove any of the connective tissue. Place slices in a cast iron skillet on medium-high heat with butter, salt, pepper, garlic, onions, red wine or Worcestershire sauce. Cook for about 3 minutes on each side [...]

Right now we're in the middle of a 3-week road trip filming for Season 12 of Big Deer TV on Sportsman Channel. I wanted to share a few photos with this update: I kicked things off in northwestern Oklahoma by shooting this beautiful 10-pointer (4.5 years old) with thick antler bases. He was pushing does all over the place and I finally stopped him with a loud eck and killed him with one 150-grain Hornady SST bullet. Rifle is the great new CZ model 600, mine in old-school .30-06, topped with the great Trijicon Huron 3X-9X by 40mm scope. Sometimes the only way to fool a gnarly old buck is to get bold and hunt near his bedroom. Risky, but it can be done. First, find which patch of cover a big deer favors. Spend a few sunrises glassing field edges, fencerows, brushy ditches, and the like. Try to spot Mr. Big slipping home after a late night on the woods. Consult an aerial photograph and draw on your past experiences to predict where the buck is holing up. One day around lunchtime go in from downwind and hang a stand on a ridge flat, along a trail, or near a funnel 100 to 150 yards downwind of the cover where you think he’s bedding.
